Clutch Leftovers: Pasta Frittata

So, this is basically scrambled eggs, leftover pasta and cheese (I also stirred in some tomato sauce), mixed together and cooked like any other frittata: cooked slowly on the stove, finished with a quick spin under the broiler. It’s a filling, starchy brunch dish that not only uses up leftovers but also can feed a crowd pretty nicely.
