Yes: Creamed Spinach

This is one of those sneaky recipes that masquerades as a green vegetable even though it’s mostly cheese and cream. Oh well.
Cooked spinach goes into a pot of butter and cream–I subbed 1% milk, and while it wasn’t as rich I felt better for it in the long run. That’s pretty much it, just cook it until the spinach absorbs most of the cream. At this point you’re done, but I put the creamed spinach into small ramekins, topped with a bit of pecorino romano, and baked in the oven until the cheese was starting to brown. Nutritious and delicious! Or at least delicious. (I actually used 1% milk, because it’s what I had on hand, and while the dish wasn’t as luscious and rich as it would be with cream, and it was still far from health food, it didn’t make me feel quite as unhealthy)
