It Slices, It Dices, It Grates and Purees and Kneads: The Greatest Appliance

Bittman’s Minimalist column this week is all about the food processor and what a wonderful tool it is. Every word in it is true (althought I once messed up food processor mayo, and felt bad about it, and now I feel terrible about it). If I paraphrased, I’d have to copy the whole thing, so just go read it now. If you have one of these, and it’s living in the back of a closet, get it out onto the countertop ASAP.
Some recipes from How to Cook Everything that are made possible by my trusty, decade-old Cuisinart:
Ramp Chimichurri
Pesto
Ginger Scallion Sauce
Pureed Tomato Sauce
Roasted Pepper Vinaigrette (or any vinaigrette)
Raw Beet Salad
Shrimp and Scallion Stir-Fry
Fresh Tomato Salsa
Salsa Roja
Potato and Leek Soup
Pureed Pumpkin Soup Without Cream
Gazpacho
Pizza Dough
Carrot Salad with Cumin
In some of these recipes, I actually used an immersion blender, but a food processor would work just as well.
